“I’ve been a vegetarian since I was 11, because I couldn’t understand why if we didn’t eat the dog I should eat a burger. I love animals, and I stand by my values. So in the morning, I have an apple and, if we have leftover pizza, I scrape the toppings into egg whites. Pizza eggs are better than you can imagine! For lunch, I’ll have a big salad and a veggie burger. I’m a fan of multicourse dinners. Last night, I made brussels sprouts baked with balsamic vinegar, grapes and walnuts; butternut squash ravioli; and a “garbage disposal” salad, which is everything in the veggie and fruit drawers: lentils, spinach, romaine, blueberries, cucumbers, raspberries, almonds, carrots and avocado. Literally anything. You don’t even need a dressing because there are so many tastes.”

On whether she or Dax is the better biker:
“There’s no comparison! I can barely walk in a straight line, let alone move in one when I’m on a vehicle that has wheels. Dax grew up as a dirt biker. He’s always doing tricks that terrify me. Even so, we ride to brunch or dinner or ice cream all the time.”

Sweet Potato Wedges

Ingredients:
1 large sweet potato
Salt and pepper
1 tablespoon of olive oil
Mixed herbs / cumin / mild chilli powder

These delicious sweet potato wedges are low in calories and high in vitamins and fiber. They're also really filling so they're a great diet food. This recipe makes about 2 portions.

1. Preheat the oven to 200C/400F/gas mark 6
2. Peel the sweet potato and cut into wedges
3. In a bowl, mix together the wedges, olive oil, salt, pepper and the spice of your choice
4. Place the wedges flat on a baking tray lined with foil, and bake for about 25 minutes or until tender and golden

For a little variety, you can do the same with potato, pumpkin, yams, and parsnip.

Ingredients:
Acai (high antioxidant berry from Brazil)
Blueberries

Raspberries
Strawberries
Rice milk

Just mix it all together in the blender! The berries can either be fresh or frozen. For thicker consistency, add a small amount of rice or soy milk. For thinner, add more milk.

She tends to suffer from very dry lips, so she also uses a tooth brush to exfoliate them twice a week. Move the toothbrush in a gentle circular motion, add water to rinse, then apply the Eight Hour Cream on top.

Lastly, Gillian is a great believer in exercise as good for your health and well being. She does 1 hour each morning of weight lifting and ball exercises, plus 30 minutes of cardio 2-3 times a week.

Gillian's Recipe

Vegetable Soup

Ingredients:
1 Medium Onion, finely chopped
2 Large Carrots, grated
1 Leek, finely chopped (sometimes I vary with 2 celery stalks)
4 New Potatoes, grated
1 can of Flageolet Beans, drained
1 Organic Vegetable Stock Cube, mixed with 1ltr of boiled water.
Salt/Pepper to season
2 tbsp Extra Virgin Olive Oil

Put 1 tbsp of the olive oil into the pot and sauté the onions over a medium heat for approx 4 minutes. Add the grated potatoes and carrots and cook for a further 5 minutes, then add the leek/celery and heat until all of the vegetables are al dente (approx 3 mins).

Pour in the vegetable stock and keep on the heat until it boils, then take off the heat and slowly puree in your blender. Once it's all been blended to your liking, pour back into the pot and place over a low heat. You can add in Chilli flakes now if you wish (they increase your metabolism) and extra salt/pepper to taste.

Once it's boiling again, add in the can of Flageolet Beans and cook for a further 2 minutes. Turn off the heat and allow to sit for a few minutes before serving.

This recipe will provide approx 4-6 servings, so a great food to keep in your fridge when dieting!

Stuffed aubergine or eggplant

Baked Stuffed Eggplant

Ingredients:
1 eggplant (aubergine)
Olive oil, extra virgin
1 onion
Mushrooms
Pesto
Cheese
Salt
Pepper

Slice one big eggplant into two halves, scoop them out with a teaspoon and place in a bowl. Spread a little olive oil inside, then place in the oven and leave for about 10 minutes at 200C (or 400F).

Chop some onions and fry in a pan until golden brown, then add the flesh that you scooped out of the eggplant, plus with the mushrooms. Add a little salt, pepper and pesto.

Remove the slices of eggplant from the oven, and fill with the fried vegetables. You can also grate some cheese on top. Put back into the oven and leave for another 15-20 minutes, or until the cheese is melted and has a golden colour. Delicious!

1/2 shallot (14 cal)

Chop the tuna in small cubes and place in a bowl. Add the pressed garlic, cilantro leaves and the chopped shallot (or onion). Take it out of the bowl and manually press it into a ball shape, then place on a plate.

Add a couple of small sprigs of cilantro (coriander) for presentation and season to taste. Drizzle with lemon juice and serve with a slice of lemon.

This could be an appetizer for two - at 140 calories each its a really tasty, guilt-free dish. Or you can keep it all for yourself and have it as a main course!

Low Fat Hummus

Ingredients:
1 can of chick peas

1/3 cup lemon juice

1/4 cup finely minced parsley leaves
1 teaspoon Sesame Seed Oil
1 tablespoon paprika
salt

This is a great, low fat, hummus snack that substitutes peanut butter and sesame oil for the more traditional tahini. Just take all the above ingredients (except the parsley and sesame oil) and blend until pureed.

Then take out of the blender and mix in the parsley leaves and sesame oil, and leave in the refrigerator for a few hours. Lastly, add the paprika as a garnish and serve with chopped vegetables like carrots or celery.
